The Pelloni dairy was established in 1889 by great-grandfather Gualtiero who already used to produce his prestigious cheese from curd realized by faggot fire; since that time the tradition has been handed down from father to son, up to the present fourth generation. First dairy farm in the whole area between Modena and Bologna, it owes its lucky and long adventure to the passion of his founding father for that ancient and hard work that however is extremely satisfying and rewarding. Gualtiero has been able to hand down to his sons every little secret and, above all, the love for an activity which is more than a mere job for the Pelloni family. After the departure of Gualtiero, the company was inherited by his wife Gemma and his young sons, who continued to run the business according to the principles of the founder himself. After some years his son Ferdinando took over the business, launching, together with his wife Giuseppina, the first substantial transformation on the production line. The company was then inherited by Athos and his wife Aurora, who modernized the dairy farm by introducing the most sophisticated technology of the field in order to control every production step from the raw material (the milk) up to the finished product.
